I think we have so many simply due to evolution. There are so many different environments, particularly climates and soil properties, that we now have plants to reflect this.

Plants are always trying to beat their neighbours and so constantly adopt to changes in the surroundings because of this each different environment could produce a plant best suited for that environment. This means you are going to get many different plants.

I guess with all the different habitats and different environments on earth (hot and cold, humid and dry), common ancestors of all plants branched apart and evolved to best fit their certain environment! Some plants evolved to live well next to water, some plants evolved to cope with very dry conditions, like cactuses! The end results is a VAST diversity of plants!!! And good thing, because plants are the sources of natural drugs and things like antibiotics! There are many medicines and other things that we wouldn’t have if all plants all over the world were exactly the same!
